Decided to experiment a little one evening and make a nice tasty treat with the ingredient I had. I must say it came out very nice and I think this is going to one of these recipes that can easily be adapted.
Ingredients
- 250g self-rasing flour
- 100g wholemeal flour
- 80g brown sugar
- 1 tbsp vanilla sugar
- 1 tsp baking soda
- 260ml unsweetened soy milk
- 1 tsp apple cider vinegar
- 5 tbsp oil
- 3 small apples
- 1 banana
- 3 plums
- 1 peach
- 1 tbsp pumpkin seeds
- 1 1/2 tbsp rolled oats
- 2 tbsp ground almonds
- 1tsp vanilla sugar for the top
- 29 x 19 x 6cm baking tray
- baking parchment paper

Method
- Start by turning the oven on to about 180 degrees C (Gas mark 4)
- Mix all dry ingredients in a large bowl, add vanilla sugar
- In separate bowl mix soy milk and the vinegar until it curdles
- Cut apples into small junks and banana into slices
- Add the milk, oil, apple junks and banana slices into the dry ingredients and mix well until all combined
- Align baking tray with parchment paper
- Place all cake mixture into the baking tray and top with plum halves, junks of peaches, rolled oats, pumpkin seeds, ground almonds and vanilla sugar
- Bake for about 35 minutes, check if the cake is ready, if not give it another 10-15 minutes
