Decided to experiment a little one evening and make a nice tasty treat with the ingredient I had. I must say it came out very nice and I think this is going to one of these recipes that can easily be adapted.

  • 250g self-rasing flour
  • 100g wholemeal flour
  • 80g brown sugar
  • 1 tbsp vanilla sugar
  • 1 tsp baking soda
  • 260ml unsweetened soy milk
  • 1 tsp apple cider vinegar
  • 5 tbsp oil
  • 3 small apples
  • 1 banana
  • 3 plums
  • 1 peach
  • 1 tbsp pumpkin seeds
  • 1 1/2 tbsp rolled oats
  • 2 tbsp ground almonds
  • 1tsp vanilla sugar for the top
  • 29 x 19 x 6cm baking tray
  • baking parchment paper

  1. Start by turning the oven on to about 180 degrees C (Gas mark 4)
  2. Mix all dry ingredients in a large bowl, add vanilla sugar
  3. In separate bowl mix soy milk and the vinegar until it curdles
  4. Cut apples into small junks and banana into slices
  5. Add the milk, oil, apple junks and banana slices into the dry ingredients and mix well until all combined
  6. Align baking tray with parchment paper
  7. Place all cake mixture into the baking tray and top with plum halves, junks of peaches, rolled oats, pumpkin seeds, ground almonds and vanilla sugar
  8. Bake for about 35 minutes, check if the cake is ready, if not give it another 10-15 minutes

This is a very simple and tasty bake, just like all baking should be 😀
